Fromagerie St-Laurent has undergone significant changes over the decades, but there are some things that have never changed: offering quality products and staying up-to-date with technology.

Since the company’s inception in 1930, several major investments have been made. These innovative changes have always been made with the goal of bringing our business to a higher level and adapting to the technological developments associated with each era.

The cheese dairy team is proud to have consistently implemented the necessary processes to comply with the environmental standards of the agri-food sector, which are important to us. In 2023, a new system was implemented, resulting in significant savings: it consumes 50% less water and 30% less energy.

Today, the Fromagerie St-Laurent plant is more efficient than ever, in addition to applying the most rigorous quality control processes. All of this is made possible by a dedicated team, state-of-the-art facilities and, above all, decades of expertise.

How is St-Laurent fresh cheddar cheese made?

Every day, hardworking people create a variety of cheeses and cheese-based products that are freshly distributed daily.

Discover the fascinating steps involved in making fresh cheddar cheese, from the farm to your plate!

 

Step 1 

Every morning, trucks collect the milk directly from the farm and bring it to our factory.

 

Step 2

The milk is then pasteurized, and the cream is sent to the butter-making department

 

Step 3

The cheesemaking begins! The lactic acid cultures and rennet (coagulant) are placed in huge tanks. Inside the tanks, knives cut the curds into one-inch cubes. The curds are the solid part that forms as a result of coagulation.

 

Step 4

After cooking, the curds are sent to the ‘’cheddarization’’ tanks. Cheddarization is the stage when the cheese develops its acidity and the desired texture. It is also during this step that the whey is separated from the curds.

 

Step 5

The cheese is passed through a mill. Cheddar curds are then obtained. It is at this stage that the cheese is salted.

 

Step 6

The cheese curds are then placed in rectangular molds. They will be pressed to obtain cheddar cheese.

 

Step 7

Now that the cheese production is complete, it’s time to weigh and package the different cheese formats.

 

Step 8

The fresh cheese of the day is delivered to various businesses: restaurants, convenience stores, grocery stores, etc. It’s finally time to enjoy it! Enjoy!
